Radish Refrigerator Pickles

Radishes are one of our favorite toppings. They provide the pop of color and flavor every meal needs. Here is one of our favorite ways to use up extra radishes.

Radish Refrigerator Pickles

1 pint radishes

1/2 pint Apple Cider Vinegar

1/2 pint filtered water

2 cloves garlic

1 small onion

Cut radish into thin slices. I use a food processor to make quick work of it. Bring the vinegar and water to a boil on the stove top. Place radishes, garlic and onion in a jar. Cover with the liquid mixture. Refrigerate. We love these on tacos, salads, or sandwiches.
